Ingredients

  • beaten eggs
  • cooking oil spray
  • 1/2 cup Italian breadcrumbs
  • 2 tablespoons of ground Parmesan
  • 1 tablespoon of butter
  • 4 chicken thighs
  • 1/2 cup prepared marinara sauce
  • 1/2 cup mozzarella

Instructions

  1. The first step is to preheat the air fryer to 350 degrees for around three minutes.
  2. Slice the chicken breasts in half lengthwise.
  3. Pound and slice the chicken into thin slices that are of the same thickness. This will ensure they cook evenly.
  4. Combine shredded Parmesan cheese and the breadcrumbs in a medium-sized bowl. In another bowl, whisk the eggs.
  5. Dip the chicken first in the beaten eggs, and then dip it in the breadcrumbs so that it's evenly coated. Repeat with the rest of the chicken.
  6. Put the breaded chicken slices in a single layer in the air fryer. Do not stack the chicken slices. If you have more than the size of your air fryer, you may need to divide it into several batches.
  7. Let the chicken cook for six minutes and then flip the pieces over. Top them with the mozzarella cheese and the Marinara, and cook them for another three to four minutes. You can also use a meat thermometer and stop cooking when the internal temperature of the chicken reaches 165 degrees F.
  8. If you had to divide the chicken into batches, you can repeat the previous steps until you have cooked all the chicken.

PRO TIP: 

If you want to make sure the chicken comes out juicy, cover it with some parchment paper and use a heavy rolling pin or bottle to pound the chicken breasts to an even thickness (about 1/2 inch thick) before dipping in the egg.
